The Up Country is considered the area in the foothills, including Mount Haleakala, up to North Shore. The biggest attraction is the sunrise on top of Mount Haleakala . This is a nice trip to do the 1st day as most people haven't adjusted to the time change and are up early .
The Kula area has a couple of nice botanical gardens and a lot of country roads explore. Further up is a great little artist town called Makawao . This is a neat little spot with lots of art shops and eateries.
Up on the North Shore is the town of Paia . Here you can find, gas, food, and plenty of souvenir shops. This is the last stop for those heading east to the Road to Hana . Just north of town is Hookipa Beach which is known world wide for wind surfing. The water is usually too choppy for swimming and snorkeling .
